Vegan Sand Biscuits

1Place the room temp margarine , caster sugar , vanilla extract and salt in a bowl and mix together. You can do this by hand, using a hand mixer with dough hooks or a stand mixer with a flat mixing hook. Mix in the plant milk and finally add the flour and baking powder . Knead everything into a dough, wrap it in plastic wrap and let it rest in the fridge for at least 1 hour.margarine: 160 g, caster sugar: 140 g, vanilla extract: 1 tsp, salt: 0,25 tsp, plant milk: 25 ml, flour: 250 g, baking powder: 1 tsp

2Preheat the oven to 170 °C and line a baking tray with baking paper.

3Knead the dough very briefly and then roll it out on a lightly floured work surface to a thickness of 4 millimetres. Cut out shapes from the dough and place them on the baking tray, leaving enough space between them. You can roll out the remaining dough again. If the dough becomes too soft to roll out, put it back in the fridge for a while to firm up.

4Bake the biscuits for 12-17 minutes until golden brown and done. After baking, scoop them onto a wire rack and let them cool.
